I had no idea someone else celebrated crayfish/crawfish like they do in Louisiana. I visited once in the late nineties and went to lunch with a group of locals. One ordered crawfish. They brought him two plates - one piled high with the crawfish and an empty one for the shells. He seemed quite proud to have moved all to the previously empty plate.
